Singapore Airlines is rolling out an upgrade to its in-flight dining, focusing on its popular Thali options. Both the Shahi Thali (introduced in 2006) and Ruchi Thali (added in 2016) are getting a refresh, promising passengers an even better taste of India's diverse culinary scene.
Collaboration with Chef Sanjeev Kapoor
The airline is working with chef Sanjeev Kapoor, who is part of SIA’s International Culinary Panel (ICP). Starting May 1, 2025, passengers in premium cabins on flights between India and Singapore can look forward to a transformed dining experience crafted through this partnership.
What's New with the Shahi Thali?
If you're flying Suites or First Class, the revamped Shahi Thali now includes an expanded main course, increasing from six to eight components. You can expect six vegetarian or meat-based dishes, along with rice and paratha. The meal also includes cold and hot appetizers, dessert, and lassi. The entire experience is elevated with copper-colored steel platters and matching cutlery. It looks impressive.
Upgrades to the Ruchi Thali
For those in Business Class, the updated Ruchi Thali features six main course components instead of the previous four. This includes four vegetarian or meat dishes, rice, paratha, a starter, kachumber salad, dessert, and lassi. The Ruchi Thali is presented using traditional silver serviceware, which gives it a touch of elegance.
Traditional Cooking Meets Modern Nutrition
Chef Kapoor is incorporating traditional Indian cooking methods into the new menus. This includes techniques like tandoor roasting, slow cooking in clay pots, and using iron griddles. He's also emphasizing gut-healthy ingredients such as turmeric and ginger. The goal is to create meals that are flavorful and easy to digest, which is especially important at 30,000 feet.
